Cheese curd manufacturing steps
The traditional cheese mill is a key part of the cheddar cheese curd process. It allows faster production for the cheesemaker.
Cheddarization
In the finishing table, the stacking and flipping steps create cheddared curd blocks.
Mechanical cutting
The blocks are loaded into the funnel of the curd mill. The back and forth motion of the blade cuts the blocks into cheese curds at the desired size.
Salting
The curd falls back into the finishing table, where the cheesemaker can add salt and mix for an even distribution across all the curd.
Dosing
At the table output, the curd is either put into moulds to make blocks or bagged to be sold as curds.
