Coatings for appearance and ripening
The application of coating allows for controlled ripening while protecting the cheeses.
A transparent coating that enhances the cheese
The coatings are designed to allow controlled ripening of cheeses in addition to protecting them during transport and handling. They are made from polyvinyl acetate (PVA) approved for cheese contact.
Key Elements
Food coatings offer different advantages for cheesemakers.
Controlled ripening
The number of coats and frequency of application allows precise control of gas exchange and water loss at each stage of ripening.
Cheese protection
The coating provides mechanical protection during cheese handling as well as microbiological protection during ripening.
Safety and quality
No transfer of coating to the cheese even when cutting. No alteration of taste or odor and suitable for food contact.
Technological support
Facilitates application of muslin labels and paraffin adhesion. Allows addition of color and bioprotection.
In details
Food coatings are formulated according to the application method, cheese need, and marketing.
Viscosity
Viscosity is adapted according to the application mode.
Bioprotection
A protective agent can be added to the coating to prevent mold growth
Color
A wide range of colors is available to highlight your product.
