Covering racks with mats helps minimize the marking of delicate cheeses.
Ripening without marking
After demoulding, the cheese is still fragile. Adding a ripening mat on the racks reduces the wire markings on the cheese and controls surface humidity.
After a few days, the mat can be removed to allow the rind to develop with minimal contact with the ripening support.
The mat avoids having different sets of racks depending on the cheese ripening stages.

The choice of mat depends on the cheese and the desired marking. It can be sold in rolls or cut to the size of your rack.
